Looking to upgrade your weekend waffle recipe with better ingredients? We got you covered! We know that in order to make a lifestyle change, it needs to be enjoyable so that it can be sustainable. Not only is this recipe packed with some healthy fats and fiber to keep you satisfied but it also leaves you feeling energized for the rest of your day!
- 2 1/4 C oat flour
- 3 tbsp packed coconut sugar
- 2 tbsp arrowroot starch or corn starch (optional but makes waffles light and crisp)
- 1 tbsp baking powder
- 1/2 tsp sea salt
- 1/2 tsp cinnamon
- 1/4 C crushed walnuts
- 1 cup organic unsweetened almond milk + 3 tbsp extra
- 1/2 C melted virgin coconut oil
- 2 medium-sized bananas (mashed)
- 2 tsp vanilla extract
Combine all dry ingredients and mix together. In another bowl, combine all wet ingredients and mix together until combined. Pour the wet mixture into the dry and stir until you have a batter. Let the batter sit for 10 minutes so the oat flour has time to soak up some of the moisture. Plug in your waffle iron and pre-heat to medium-high. Once hot, scoop batter into waffle iron using a 1/2 C measuring cup. Batter will be thick. Cook waffles for about 3 minutes each side. Waffles should be fluffy and light brown with a crisp coating. Top with fresh fruit, nuts, nut butter, cacao nibs, raw honey, etc.
